Over the Christmas period, we barely ate at home at all and the last week we just cleared what we had left in the cupboards. This week, however, we are back on track with our meal planning and trying to fill up the freezer - I want to have a few meals in the freezer for after the baby is here, so that we all have easy but healthy dishes to eat. Here is a list of the meals I have planned...
Lasagna - A classic freezer meal. It has to be one of my favourites, although, I really don't tend to make it that much.
Smoky Sausage Casserole x 2 - I haven't made this before but it looks very yummy. It also seems a fairly easy recipe, it just takes a while to make.
Beef and Stout Stew with Carrots x 2- this one just screams winter!
'Spag bol' - Obviously another pasta and beef meal but this is a great one for Jackson, as he loves it!! At times he can be really fussy with his eating but he will always wolf this down. I chop loads of veggies into it too so he gets a wide variety.
Chicken Pie - We make this loads, Chris absolutely loves it. I wouldn't have thought it would freeze well but it actually does perfectly.

What Jackson ate #2
Jackson has got so much better with eating recently but it can still be a bit of a struggle to get the veggies in him! Here is what he had one day...
Breakfast
1 and 1/2 weetabix with a few raspberries and some warm milk. I mix it all together to make a porridge-like consistency.
He also had his milk like normal, a tangerine and 1/2 a banana.
Snack
We went to a playgroup and he had a mixture of fruits and a few bread sticks.
Lunch
It was an easy one for lunch; beans on toast with a side of grapes. This is a meal I know he will always eat and he did eat it all this time, apart from a few crusts (I don't get why all children seem to leave the crust!!).
Snack
Strawberries, melon and a couple of cheesy biscuits.
Dinner
I was a bit of a wonder-mum this evening, as I made a mini roast! We didn't get round to it on Sunday so had to make it before it went off. He had roast chicken, broccoli and roast potatoes. Jackson ate all of the chicken but left the rest. We had a bit of a battle to get him to even try the broccoli!
For dessert we gave him a yogurt.
